What's the difference and which do you need?
The main difference is insulation.
A horse sheet is lightweight and generally has little or no insulation/fill. A horse blanket has insulation and is intended to provide warmth.

So for your Horse Care & Wear products, I'd use this rule:
Sheet = no insulation. Blanket = insulated.
Also, turnout usually means it's designed for outdoor use and should be waterproof or highly water-resistant, whereas stable products are intended primarily for indoor use.
For example, a 1200D waterproof shell with 0 g fill should be called a Turnout Sheet, while the same basic product with 200 g fill would be a Turnout Blanket.
